I will fully admit I've been vague and contradictory about how the demon and souls work in a vampire. At times I've been like "well, it's a demon inside them, and the soul goes away." Other times I've written that "the demon is really just a term for the black magic animating the vampire, but the soul is still kinda there."
And then we have this comic, which would seem to contradict both of those theories. Ugh.
So here, again, let's see if we can clarify the rules I use:
1) A vampire is made by another vampire, through a sharing of blood.
2) That newbie vampire is animated by dark magics, and as the vampire grows, those dark magics grow and strengthen.
3) The dark magic does have a side effect, though. It limits the influence of the soul, to the point that a good person (in life) will become an evil person (in death), and a really evil person (in life) becomes, like, Hitler or something.
4) The spell that was cast on Darkmoon removed the evil influence of the "demon" (as the vampires call it), allowing his soul full control over his person (for better or worse, as this is Darkmoon we're talking about).
5) In the case of Raye, though, the argument could probably be made that since Darkmoon didn't fully know gypsy magic, he just balanced to two forces, and they were warring inside of Raye.
Of course, fully expect me to contradict that later.

I'd been interpreting it as basically the anti-soul. Like, the demon is the vampire's equivalent of the soul, but inherently dark instead of inherently light. Like the soul, the demon has great energy and comprises the true nature of the being in question. When the human becomes a vampire, first they die - having their soul leave - then are born as a vampire with a brand new demon. Presumably the soul return spell calls the soul back from wherever to take over the body again. Since the demon and soul are still the true natures of the individuals, it would make some sense for Darkmoon's demon to run away from the unnecessary fight with Herschel's soul... whereas both of Raye's identities would be equally unwilling to back down.

When evil spreads across the land, and darkness rises and the monsters roam. When the creatures of the night make beautiful music, and the things that go bump in the night go bump with greater enthusiasm. When the world is in peril and is in need of a hero...

These guys are, sadly, the best the world can hope for. These are the adventures of the heroes of CVRPG. They mean well, they try hard, and occasionally they do the impossible...

They actually do something heroic.
